Dear MetroKitchen:

What’s the purpose of John Boos Mystery Oil?  How often and when should I use it?

John Boos Mystery Oil is used to keep wood from drying, cracking and warping.  You may apply Mystery Oil on any wood food preparation surface such as butcher blocks, cutting boards and counter tops.  Mystery Oil is a combination of mineral oil, linseed oil and tung oil so it is not harmful.

You should use John Boos Mystery Oil about once a month or when the wood surface starts to look dry.  Under normal use, once a month is appropriate.  To clean wood food-preparation surfaces, wipe them with warm, soapy water then rinse and dry thoroughly.  Never immerse the surface in water or leave water on the surface.  You want to make sure to dry the surface as best as you can.

To use Mystery Oil, squeeze it onto the wood surface and spread it evenly with a paper towel or cloth.  Allow the oil to rest for five minutes and then wipe excess oil.  It’s best to warm the oil by placing the bottle in hot tap water before you start the process.  Also, you want to shake well before using it.
