First, the Ikon version uses a different bolster (the mound of metal between the blade and handle) so that you can slice with the entire blade length. The Classic version, on the other hand, uses a bolster that gives you a spot to rest your fingers for more comfort.

The handle on the Ikon sandwich knife noticeably has a greater luster and a different shape. It feels smoother and slightly more ergonomic. Both handles are resistant to damage and bacteria because they’re made from a tough poly material.
